Random post here but since many of the readers have known me since my high school days I just wanted to pass along something new I’m excited about in my life…..
My wife and I are opening up a restaurant in our old college town of Waco and we’re using the web and social media to help decide what kind of restaurant it should be!
The local Fox affiliate ran a story on us which you can see below….anyways just wanted to pass it along. If you’re driving through late fall/next year, check it out!

Hell we are almost your neighbors as we will be moving back to our favorite Town from Houston to Austin in the next year.

One of the secrets to success in the restaurant trade is to have something no one else has. In Waco, I’m fairly sure there are no Icelandic restaurants. There may be a great untapped demand form lamb’s eyes and puffin slow-cooked in volcanic mud. Think about it, TC.
More seriously, I am one of those who has known you since high school. You have made a difference with your life already. Keep up the good work. I have no doubt that everything you do will be a quality effort.
PS: that’s your high school days, not mine.
I’ve got an idea… Call it “Too Healthy” under the guise that people will come there to eat “healthy”. Then fill the menu with high fat and carb menu items. It will be a big hit! After a couple of years when you’ve made your fortune you can sell it to McDonalds, but keep the name…
